Vasantha Prasad has proved in this delightful cookbook that showcases the delights of vegetarian Indian food that a healthy vegetarian diet need not be dull and unexciting. Using ingredients that can easily be found in American stores and taking advantage of the conveniences of the modern kitchen, she concisely describes the spices, sauces, and dishes of a full Indian menu. We are treated to homemade chutneys and relishes, soups, and breads -- chapatis, naans, and parathas -- and the whole range of main-course dishes: dals and bean dishes, corn and bell pepper curry, broccoli with garlic and red pepper, potatoes in spicy yogurt. For the more adventurous cook, there are recipes for dishes like idli (rice and dal patties), and Indian crepes and pancakes.
